Madrid Fusion is a vanguard gastronomy festival, It serves as a reference in the world in technology innovation and scientific investigation applied to gastronomy. This is where big chefs like Ferran Adrià, Alex Atala and David Chang go to present their newest ideas and techniques. Obviously, it was a great honour to be invited to close out the festival, but also a huge challenge. Can you imagine having all these specialists in the crowd watching you doing this freak crazy show? But you can see in people’s face that they had a great time!



The concept of Ain TheMachine in The Kitchen is to offer a tasting menu of 3 course, cooked live on the beat. Knowing that Lourdes Plana, the festival’s director, likes “Pao de Queijo” (Brazilian cheese bread), we decided to include it in the menu. The menu was a Gazpacho de Calabacín (zucchini gazpacho),  Pao de Queijo and Mousse of Passion Fruit, all cooked live as part of the music construction.



With the music ATM tried to be as much in tune with the courses as possible. That meant opening with a softer first course to open the taste buds, growing through the second course and then hitting the grand finale with the dessert. A tasteful, sweet melody that had the whole crowd singing.
